Description: Allspice is the fruit of a tropical tree that grows in Jamaica, Cuba and Mexico. It has a dark brown/reddish colour, and its berries are not all the same size.

Uses: It goes with sausages, pork, marinades for meat and chicken and with pates. It even goes with sauces made with wine or tomatoes, in barbecue sauce, most white sauces and in pies. In baking, you can use it in compotes, cakes, Bavarian cream and biscuits.

Combinations: Reminiscent of cinnamon, cloves, nutmeg, ginger and pepper, it combines perfectly with them. It also mixes wonderfully with bay leaves, cardamom, coriander, cumin, paprika and turmeric.
